Vegan/Vegetarian Recipes

    JUST SO EVERYONE KNOWS:
    "Vegan" cheeses, like rice cheese, soy cheese, and ect., all contain Casein, a milk protein.
    Counter intuitive? NAAAWWW, the companies don't care.

    But yeah, sometimes people sell homemade raw food vegan "cheeses". They don't melt, they're made of nuts, like pine nuts or cashews, and are fermented. (Generally.)
    And most vegan recipes based around the cheese-y flavour (Mac and cheese) use nutritional yeast. I've never had it, but it quite popular among some vegans. I've been meaning to try it.

    But yeah, Read the labels. Most store-bought fake cheese contains dairy.

    Would this milk protein be listed in the ingredients? Also wondering where you found this out? Just curious. I don't eat much vegan cheese, today was the second time I've ever eaten the stuff.

    I've been making a lot of this lately:
    Vegan tofu scramble

    *1 14-ounce package extra-firm tofu, drained
    * 2 tablespoons vegetable oil
    * 1/4 teaspoon turmeric
    * 1 tablespoon garlic powder
    * 1 teaspoon onion powder
    * 1/2 cup nutritional yeast
    * salt and pepper, to taste
    * 1/2 pound mushrooms, chopped (optional)
    * 1 green onion, finely chopped (optional)
    * 1 bell pepper, finely chopped (optional)

    Using a fork or potato masher, crumble the tofu into small pieces and then sauté in oil in a frying pan. After a few minutes, add the remaining ingredients, turmeric through bell pepper, if used. Lightly toss in the pan until well-cooked. Serve warm.


    Also, hummus.

    * 1 cups dried chickpeas
    * 1/2 cup tahini
    * juice from 1 squeezed lemons
    * 1-2 garlic cloves
    * 1/2 teaspoon cumin
    * 1 tablespoon + 1/8-1/4 teaspoon baking soda
    * salt, to taste
    * paprika, to taste/garnish
    * olive oil, to taste/garnish
    * fresh parsley, to taste/garnish

    Soak chick peas overnight, with 1 tablespoon of baking soda. Rinse them off and add water and 1/8-1/4 teaspoon of baking soda back to the pot. Cook the chick peas on medium-high for about 30-45 minutes , depending on how hot you've got the stove. Try and skim off as much baking soda foam and chick pea skins as possible. The baking soda helps take the skins off the peas, which adds to a smoother texture. Cook the peas until you can mash them easily between your fingers. Drain/rinse the peas, mash them up with a food processor and ad the rest of the ingredients, mixing them with the processor as well. If the hummus is too thick, ad a bit of water to get the desired consistency.

    I've also made hummus without a processor. A good trick is to boil the chick peas a little longer and mash them with a spoon or potato masher. Also, with this method, try and chop the garlic/parsley as finely as possible.

    I almost never buy vegan cheese since it's so expensive but i did buy one yesterday believe it or not, from Redwoodfoods, UK and i'm reading all i can on it now but it doesn't seem to be any dairy in it. It says: vegetarian and vegan, dairy free, cholesterol free, no hydrogenated fats, no artificial colors or preservatives, GMO free, wheat & gluten free. Amongst the ingredients there are nothing suspicious either, so this one should be safe.

    I believe I originally read about casein in a vegan cookbook I have, called Garden of Vegan.
    I think. Could have been somewhere else.
    But on one brand of vegetarian products I know of, they have cheese-less pizza, or cheese-less mac and cheese, and they actually have it listed as "casein (a milk protein)". (I like that they're honest about it. XD)
    But yeah, if you look up casein, you can plenty of info on it's sources and extraction process and whatnot.

    I didn't actaully know that it was in vegan cheese until an old freind and I had like, a 3 day binge of vegan grilled cheese sandwiches, and then her mother showed up and was like "OH, BY THE WAY, I found out that's not actually vegan. It has---" and I was like "Casein...? D:"
    And I've checked most brands of rice or soy cheese that I've seen since then, because I quite liked cheese. And they've all had casein. So... ):

    Wicked.
    I have to look that up to see if it's sold here... >_>

    You can make your own soy yoghurt or soy cheese quite easily. Use vegetable rennit to co-agulate the soy protein for cheese and any of the vegan soy yoghurts to culture the soy milk. Link for soy yoghurt making http://www.soya.be/how-to-make-soy-yogurt.php
    Tofu is co-agulated soy milk anyway so you can follow the method below or any basic cheese making recipe and replace the dairy milk with soy milk

    Soy Cheese Recipe: Ingredients

    * 3 (15 ounce) packages firm or extra firm tofu
    * 2.25 fluid ounces soy milk
    * 1 1/3 tablespoons of organic oil
    * sea salt to taste (about ½ teaspoon)
    * 3.4 fluid ounces tamari
    * 2.8 fluid ounces cider apple vinegar
    * 2.8 fluid ounces tahini (ground sesame seeds)

    Soy Cheese Recipe: Method
    You will need a large pot, medium bowl, large bowl, masher, and a covered container.

    (a) Remove tofu from packages and drain.
    (b) Cut the blocks into thirds. Boil them in water for ten minutes.
    (c) Meanwhile, whisk all the other ingredients together in a bowl until smooth and all lumps have disappeared.
    (d) After the tofu has cooked, drain it well for ten minutes (using a colander, clean cloth, or paper towels). Then put it in a large bowl.
    (e) Mash the tofu until it has an even texture that is close to the texture of cottage cheese. Be careful not to leave lumps too large or to mash too finely.
    (f) Add the other ingredient mixture to the tofu. Stir well. Refrigerate (at least) seven hours until thoroughly chilled.

    This recipe will yield about 7 cups.

    If it is casein in that cheese i bought, wich it says nothing about, it would be a surprise to me since i'm super sensitive to casein and even more to lactose; it's enough if i take a painpill containing microscopic amounts of lactose for me to throw up from it, so i think i should've noticed.^^ Hope you can find a vegan cheese that is actually vegan :D

    Ok, now i've been looking around a bit at the vegan cheeses that are available near where i live, none of them contain any casein or other animal products. These are:
    Cheezly from Redwoodfoods
    Sheese from Bute Island foods ltd.
    Tofutti slices

    Vegan Recipe - Chili

    Just made a big batch of vegan chili to eat and stick some in the freezer.

    Recipe as follows

    i) Put some olive oil in a heavy based pan and add spices (2 tsp coriander seeds, 1 tsp caraway seeds, 2 tsp cumin seeds, 2 tsp dried chili flakes, 1tsp paprika)
    ii) Warm spices until start to release aroma - don't burn them
    iii) Add two finely chopped white onions, sweat until translucent
    iv) Add 1 each of red, yellow, green capsicum, roughly chopped (bell peppers?)
    v) Add three cloves of garlic, 2 red chili peppers - finely chopped (more or less dependent on the heat you like)
    vi) Add 400g can of tomatoes
    vii) Add 400g can of cannellini beans, a 400g can of red kidney beans and I added a 400g can of mixed beans (navy, garbanzo, great northern beans, lima beans, soy beans)
    viii) Cover with water, add some vegetable stock, coarse ground black pepper and salt to taste (amount of salt depends on saltiness of vegetable stock)
    ix) Simmer for 1 hour
    x) Add 1 cup of corn kernals and 1/2 cup of white rice (I'm lazy that way - I like to eat my chili with rice but rather that cook it seperate I put it in the chili)
    xi) Simmer until rice cooked (about fifteen mins - but be careful this is the time that the rice might catch on the bottom and burn)
    xii) You can add TVP, tofu or vegan casserole mince if you want to add further ingredients.

    Makes a shitload and freezes well. I divide into portions and stick in the freezer and take one out and heat in microwave whenever I fancy some.

    Bumping this thread.

    I'm going to start a blog with pictures and recipes of vegan food I've prepared myself, to share with everyone so as to answer the age old question, "You're vegan....what do you eat?" and to show people vegan food is easy to prepare, and you don't have to sacrifice your taste buds either. Some will be my own personal recipes, others will be some out of a vegan cookbook, either directly copied, or tweaked just a bit.

    Basically my question is does anybody have any recipes they'd like to contribute?

    it's always good to make goulash when yer poor and vegan, idk your financial bidness but that's what it is for me; i just throw veggies, brown rice, beans and a crazy amount of seasoning into a pot and it always comes out awesome. also, vegan potato rolled tacos: boil potatoes till they're almost done then i put em in a pan and finish cooking them, add veggies and seasoning here. then get some corn tortillas, put some oil in another pan. while yer waiting for the new pan to heat up put the now smashed taters in the corn tortillas and rolled em up, then put them in the oil till they're crunchy and brown. i put avocados with red onions, lemon juice, and salt n peppa in a bowl and eat each taco with some damn tapatio and the avocado mixture, really filling and warm, and fresh.
    also, using wheat gluten is semi easy and fun to play with because of it's texture, you can make orange chicken with it, carnitas, pretty much anything

    Just made a mocha 'cheesecake' today. It's really rich but good. The problem is the pastry case I made - it's slightly softer than titanium... I fucking hate making pastry, mine always falls apart or goes wrong in some other way (e.g. being waaaaay too hard).

    I also made mushroom soup this week and mixed it with some leek and yeast flakes to make a nice pasta sauce. That was damn tasty...

    Haven't made that Pad Thai yet but watched the video and I think I most certainly will.

    Although some stuff are less expensive then meat/diary products, it's still expensive.

    Is it profitable to buy a machine that can make milk ( soya milk in this case), and soya seeds ?

    Soya beans aren't easy friends, very depending on a warm climate and living in a symbiotic relation with Rhizobium japonicum, a bacteria not native in europe, but important for the plants need for nitrogen needs.
    So you need not only the seeds for the plants, you'll need Rhizobium japonicum strains too.
    Soy bean plants are taproots which penetrate the ground deeply - so it's difficult to raise them under glass house conditions to make up for cold and bad weather.
    If I remember it right, only up to 80 percent of the plants bear fruit, so only the industrial processing will make economic sense, compensating the losses through the complete utilization of the whole plant.
    Soy beans are very vulnerable for infection with parasitic fungi and bacteria too, I think the nazis in germoney tried during the war to compensate the protein shortage via soy beans, but failed badly because of weather conditions and crop shortfalls, soja cultivation in europe was never really important (> 2% of the world trade).

    Soya mills are avaliable, but I think it makes more sense to by the unprocessed beans instead of raising themselves in the garden. Soy meal makes good fertilizer for the garden.

    Resurrect.

    Made Toad in the hole yesterday with sweet potato mash and roasted squash. Was bloody delicious. Do people outside the UK know what Toad in the hole is? Anyway, I loved it as a kid and I'm glad I can still have this as a veganised treat for dinner.

    Also, made a mushroom scramble for breakfast today - basically the tofu scramble recipe but with mushrooms instead (as you could well guess). The shrooms needed using up. Was damn good.
